Banana Bread

I love banana bread. Every time I put my hands on ripe bananas they turn to a banana loaf. Yesterday it happened again. So I took Martha Stewart cook book and start taking out staff and mixing. Being me, I didn't check if all the ingredients I need are at home, how surprise I was when I came to take out the sower cream and couldn't find any... for a second or two I was bummed out, stating baking at 10 PM and not checking if every thing I need is home. But, as I start thinking what to put in instead of the missing sower cream I have spotted the Yogurt Mr. Davis bought that day... well, there is no much difference (just in calories and flavor) and hack with it, if it's not good it will go to the compose any way :-) ... On my way t0 the pantry to look for some walnuts I came across the coconut, why not?? I asked my self and dumped to the mixture a hand full :-)

And if you asking your self what happened to the banana bread????




well, it is almost gone!!!

Banana Bread with my twist:
-----------------------------------

1/4 pound (1 stick) unsalted butter, at room temperature
1 cup sugar - If using a sweet ed coconut cut sugar to 1/2 cup
2 eggs
11/2 cups unbleached all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mushed very ripe bananas
1/2 cup sower cream - I used 100 gr. diet yogurt
1 teaspoon vanilla
1/2 cup chopped walnuts or pecans

Preheat oven to 350 F (180 C). Butter a loaf pan.

Cream butter and sugar together. Add the eggs beating well.
Sift the dry ingredients together and combine with the butter mixture. Blend well. Add the bananas, yogurt, coconut and vanilla. Add the walnuts and mix well. Transfer to the loaf pan. Bake for 1 hour, until a cake tester comes out clean.
cool and enjoy.


** P.S Don't want the walnuts to be in one place? flour them before adding to the mixture, that will prevante them from sinking down...
